For me, Sunday's have become busy days! My mom and I scrapbook all afternoon. Sometimes my neighbor or a friend or two joins us. I came up with salad bar Sunday as a way to avoid the kitchen and spend more time in my scrap room! It's great for summer when I don't want to get my crock pot out.
Salads can be prepared way ahead of time and all ingredients taken out at the last minute to serve. If this sounds like a fun idea to you, it's really easy! Chop and clean your lettuce and prepare all of your toppings. This can be cheese, carrots, olives, peas, boiled eggs, bacon, sliced almonds, and countless others! Place all of your ingredients into serving pieces and keep in the refrigerator until it's time for dinner. Throw a gluten free bread mix into the bread machine!
I like to have some kind of grilled meat on my salad, so I marinated a flank steak. Just before dinner I grilled and sliced it. You could also use chicken, fish, tofu, just about any type of protein you like.
I think what makes a salad is just the right dressing. I am weird about salad dressings. As a kid I didn't like them at all! I still like very few bottled dressings. I prefer to make my own. I have a couple really easy recipes to share. I have to show you how to make them with pictures. I don't have measurements for things. Who wants to spend time measuring things for a dressing and dirty up all that stuff?
The first one is for Thousand Island dressing. This is my absolute favorite dressing and it take literally minutes to make!
I keep these handy Ball Jars on hand. I love them! They are great for leftovers, dressing, anything! The plastic lids are easy to clean.
You will need, mayonnaise, chili sauce and pickles or pickle relish.
Make sure the brands you get are gluten free of course!
My favorite pickles are Trader Joe's Sweet Organic Bread and Butter Pickles.
Now, this technical.
Put some mayonnaise in the jar.
Add a couple spoons of chili sauce.
Then some chopped pickles. Obviously, if you buy pickle relish, you won't have to even chop pickles 🙂
Stir. Carefully. Add a little pepper.
See, that was easy!
Now, for a ranch style dressing. I got the original recipe from Carol Fenster's website G Free Cuisine. She called it a Caesar Dressing, but to me it tastes like ranch. I have changed the proportions a bit, but the basic concept is still the same.
Again, dump some mayo in the jar. Leave a little room on this one.
Chop two green onions and add to the jar.
Add a splash of red wine vinegar. About two tablespoon full. Add more if you like more!
Add about a teaspoon of oregano, a teaspoon of sugar and about 1/4 teaspoon of garlic powder. Don't measure this! Just dump it in your hand and call it good!
For this next step, you will need an immersion blender. If you don't have one, you can put all your ingredients into a food processor and give it a whorl. If you don't have either of those things, then before adding your onions, chop them very small! Mix well.
Oh, now that's what I'm talking about!
