One of my favorite leafy green vegetables is spinach. I don't really like it cooked, but I love to make salads with it. I think spinach lends itself well to pairing it with fruit and nuts. So I came up with this salad idea.
Build your salad base with baby spinach leaves. Top with slice onions, feta cheese, slivered almonds and pomegranate seeds. Drizzle with sweet orange dressing
Sweet Orange Dressing
1/4 cup Orange Muscat Champagne Vinegar (from Trader Joe's, or any orange flavored vinegar)
1/4 cup honey
1/4 cup oil
1 tablespoon fresh parsley
Mix well and serve over salad.
Along with this salad I had some simple brown rice and quickly grilled some Trader Joe's Chicken Apple Sausage. I love this sausage because it makes a quick healthy meal. The ingredients are simple, Skinless Chicken, maple syrup, evaporated cane juice, dried apples, salt, lemon juice and spices. They are gluten free and have no preservatives, BHA, MSG or any of that junk in them. I always keep them in my freezer for a quick meal. If you don't have a Trader Joe's near you look around your grocery. I'll bet there is something similar.
I did another post where I used Sam's club spinach sausage that is pretty good too.
You know if you have easy things like this on hand, it makes meal time so quick. And, it's healthy! You can substitute other fruit in the salad and even different nuts. Sometimes I use Mandarin oranges or apples, cranberries. The dressing is a simple formula. Equal amounts of oil, sweetener and vinegar. You can choose from so many flavored vinegars now so there are many choices.
