Are you sick of turkey yet? Need a quick meal or snack? I learned this quick trick here at Gluten Free Gobsmacked. I love pizza. Especially one with a thin and crispy crust. I never thought to use corn tortillas for the crust until I saw the post over at Gobsmacked. She makes hers in the skillet but I make mine in the over like traditional pizza.
Yesterday at lunch we had had enough of turkey and could eat no more. So I pulled out the tortillas, some pesto, cheese and toppings and made this quick and easy pizza.

You will need:

Corn tortillas
Pesto sauce or tomato sauce
mozzarella cheese
Parmesan cheese
Your favorite toppings (we like artichoke hearts, pepperoni, onion, black olive, peppers)
Spray the bottom of a cookie sheet with a gluten free no stick spray. Lay your tortilla on the cookies sheet. Spread pesto or sauce on the tortilla. Top with cheese and whatever topping you desire. Sprinkle with Parmesan cheese. Bake at 400 degrees until cheese is melted and lightly browned about 10 to 15 min.
This is easy, quick and makes a delicious pizza. Best of all if you are making this for your family, everyone can make their own just like they like it. It would be a great week night meal or just a great snack!
