One thing I always try to have on hand are corn tortillas. I buy Mission brand. You can buy them in your mexican food isle. There are numerous other brands as well. Just make sure they are all corn tortillas and contain no gluten. I like to make quesadillas with them. You can fill them with just about anything you like. I like to have them for lunch and use leftovers from the night before. In the one pictured, I have leftover chicken, carrots, pea pods, onions, cheese and cilantro. But you can use anything you like!
Corn Tortilla Quesadillas
two corn tortillas
any kind of diced meat (chicken, ground beef, shredded beef, seafood, fish or beans)
cheddar cheese
vegetables (onion, tomato, green pepper etc)
garlic
salt
pepper
cilantro
oil
salsa
sour cream
avocado
Brush one side of one tortilla with oil. Lay oiled side down on a skillet or grill. Layer cheese, meat, vegetables, spices and them more cheese. Then place the remaining tortilla on top and brush the top side with more oil. Grill in pan or on the grill as you would a grilled cheese sandwhich. Top with salsa, sour cream or fresh avocado. Enjoy!
